Sweet Potato Fritters.

These are very quick and easy to make, and perfect for a side dish to go with your dinner meal, snacks, or have them cold in kids school lunch boxes.  We served ours with some tomato sauce, YUM!

2 1/2 Cups of Grated Sweet Potato
1/2 Cup of Finely Chopped Red Onion
2 Tbs of Breadcrumbs
1/4 Cup of Plain Flour (Might need to add a extra table spoon or 2)
1 Lightly Beaten Egg.


1. Put all ingredients into a mixing bowl and combine them all together, with your hands is fine.
2. Heat some oil in your non stick frying pan on a medium high heat (I used coconut oil). Grab a small handfull and flaten the mixture out and place into yhe frying pan. 
3. Flip them after about 3 minutes and keep cooking until the other side is golden and crispy too.  Place on some paper towel to absorbe left over oil, then serve with some tomato sauce and enjoy!.
