Roasted Pumpkin Salad.
Such a yummy and refreshing salad to eat in the Autumn. We served ours with lemon chicken fillets. The salad alone is filling enough and will be perfect for lunch or dinner. Very healthy, fresh and delish! I can see myself going back to this to make it again and again and again.
There isn't any exact measurements to this recipe, just serve however much you want/need of each ingredient.

Spinach
Roasted Pumpkin of your choice
Red Onion
Pepitas
Lemon and/or Lime
Feta Cheese
Salt and Pepper to taste.
1. Dice up the Pumpkin and place in a roasting tray lined with some baking paper, spinkle some olive oil, salt and pepper and place in preheated oven @ 200 degrees celsius for about 30 mins or until cooked through (will vary on how big or small you diced your pumpkin.)
2. Lay down a bed on Spinach, follwed by some Red Onion and the Pepitas.
3. Place the roasted Pumpkin ontop, squeeze some fresh Lemon and/or Lime, and crumble some Feta Cheese! Enjoy!
