Eggs Baked in Avocado
This recipe is very easy and quick! A filling breakfast or snack and is very healthy and good for you too!
1 Avocado
2 Eggs
Salt and Pepper to taste (optional)
Fresh Cherry Tomatos (optional)
Fresh Parsely
1. Preheat your oven to 200 degrees celsius.
2. Cut the Avocado in halfs and scoop out some of it's insides where the pip was. - Don't chuck is out, save it for later!!
3. Crack an Egg in each half of the Avocado and season with Salt and Pepper. (I only used Pepper for mine.) Bake for 15-20 minutes, or until the Eggs are cooked.
4. Plate up! Add some Cherry Tomatos and fresh Parsely for an extra tasty flavour! Enjoy.
